Vineyard and Viticulture:
Vineyards are located in the sub-region of La Arboleda in Tupungato at high altitude (approximately 1200 metres above sea level). The vineyards benefit from bright sunlight with cool evening breezes from the Andes. Due to low rainfall and steep slopes, drip irrigation is used which is supplied by underground aquifers. The soil is predominately limestone and free draining. The average age of the vines is 37 years with yields of 84 hl/ha.
Grapes are harvested by hand using 16 kg crates, destemmed, crushed and a pneumatic press used to extract the juice. Skin contact lasts for 8 hours to extract greater aromatics and flavours. Wild yeasts are used for fermentation which lasts for 25 days at 1013°C in cement tanks. The wine is subsequently left in cement tanks for 3 months prior to bottling
Aromas of tropical fruits such as pineapple & passionfruit with floral notes. Fresh acidity on the palate with notes of lemon & elderflower.
Perfect with white fish dishes or simply served on its own.
