Vineyard and Viticulture:
Grapes come from North facing vineyards at an altitude of 220 metres, this estate follows a sustainable approach to viticulture. The 15 year old vines are trained using a Bilateral Cordon method with drip feed irrigation, 2222 vines per hectare are planted, producing yields of 40 hl/ha. The soils are predominantly granite/schist, with a layer of clay and loam soil.
Grapes are hand harvested, de-stemmed and crushed. Each Variety is vinified separately. Fermentation lasted for 7 days at 22-25ºC in small open top stainless steel tanks. The wine is then racked off its lees and matured for 6 months in 50% French & 50% American oak 225l barriques, of which 50% were new. The wine undergoes fill malolactic fermentation & is fined and filtered before bottling. It is matured for a further 6 months in bottle before release. The blend changes every year with the 4 best red grape varieties selected each vintage.
A perfumed bouquet with notes of black fruits, blueberries & a hint of spice. Full bodied palate with firm tannins offering structure for bottle maturation.
Ideal with red meat dishes or cheeses.
