Domaine Naturaliste, Direction Series, Floris, Chardonnay, Margaret River

Tasting notes:

Floris is a modern and engaging expression of our local clone into wine. This style is a coevolution of Modern Australian food and wine culture, which has great emphasis on balance, freshness and hedonistic pleasure. The sustainably farmed vineyard is in the cool southern end of Margaret River. Floris exhibits delicate textures and floral notes reminiscent of white jasmine flowers. The palate reveals a delicate balance of bright fruit characters, mouth filling texture and precise minerality.

Food matching:

Roast free range chicken, veal, strong cheeses

Single Vineyard Maturation Fermented and matured in 1/3 new 228L Burgundian French oak barriques for 10 months with a mix of low to medium toast levels. The wood is primarily from the Voges and Allier forests.

Floris uses a variety of winemaking techniques including restricted malo‐lactic fermentation for textural harmonising. Fermentation and maturation occur in French oak barrels which enables a high ratio of lees contact to the volume of wine. The barrels are stirred fortnightly to add complexity and texture through “sur lie” whilst retaining purity of character and freshness.

Cellaring Potential:

Attractive in youth | up to 5 years maturation.
