Claymore, Walk on the Wild Side, Shiraz, Clare Valley

Donna Stephens & Marnie Roberts

100% Shiraz

100% Clare Valley

Deep purple.

A step up in the oak regime for this baby shows in the aroma of the 2012 Wild Side. There is dark berry / blackberry fruit but it is surrounded by lashing of roasted coffee, cedar, spice and chocolate. Plush, inviting and complex.

That cedar and coffee bean continue in the mouth but with more Christmas cake, juicy raisins and forest berries. 60% fermentation on Viognier skins shows as lighter aromatic notes on the palate.

There is more weight to this blend than we have ever seen - a combination of the spectacular ripening conditions and the use of 40% Shiraz fruit from our Burgess block. Grown high on a hillside, enjoying stunning views across the Leasingham valley the Burgess fruit has a hard slog each year ripening low yields on hungry soils…but all that hard work pays off in intensity of flavour and colour. The finished blend represents an accessible yet complex Shiraz of weight and structure.

Will cellar remarkably well in the medium term (4-8 years). As a young wine I think of game meats or steak and kidney pies but that gently charred oak will also suit a platter of smoked meats.
