BOUQUET

Can an aroma be deep? That’s certainly what this wine is – full of deep dark and dense fruit, brooding away. There is some really appealing soft oak spice and char that plays alongside the dark forest berry fruits – a nose that indicates great potential as all that black fruit opens up over time.  

PALATE

There is a richness to this wine that stops short of being overblown; big soft fruit that fills the front palate, held together by firm tannins and natural acid. Flavours of tobacco and chocolate sit alongside dark plum and forest berry fruits and savoury oak spice lingers on the finish. This is a full bodied beast, worthy of extra time in bottle to really come into its own.   

GENERAL

We invest pretty seriously in the making of this wine; from hand selecting the best fruit from our Penwortham vineyard to letting it hang on the vine just a touch longer, concentrating all that flavour and then allowing the wine a minimum of 24 months in oak before going to bottle unfiltered, unadulterated.  

SERVE

We’ve given this one 6 months in bottle already but it’s not even touching the sides (so to speak)! Cellar 810 years or, if drinking early, try a garlicky slow braised lamb shank and mash to balance the weight of this gentle giant.
