Waverley Hills produces organic wines that are certainly different! Health conscious wine connoisseurs will be pleased to learn that this wine is not only a soft enjoyable drinking wine, but also clean and free of pesticides, fungicides and herbicides.
Waverley Hills Organic Wines is situated on the R46 between Tulbagh and Ceres, South Africa, at the foothills of the winter snow-capped Witzenberg Mountain Range with its diverse fynbos (indigenous flora) eco system. The Waverley Hills Estate is situated opposite the premises of the original Waverley wool dye-works and some of the original buildings are still in existence today where they produced blankets during the Anglo-Boer and First World wars.
The grapes used in the making of Waverley Hills organic wines are cultivated on the farm Waverley Hills that is owned and run by the Du Toit family. In 2000 it was decided to enter the challenging organic market and 30Ha of vineyard was planted.
The fertile Oakleaf yellow clay terrain is impregnated with river stones, resulting in well-drained soils with excellent water holding capacity. All the vineyards are irrigated with pure, mountain spring water. The terroir of Waverley Hills is perfectly poised to produce icon organic wines in South Africa.
Waverley Hills Organic wines are HACCP and BRC certified to guarantee excellent quality wines. Furthermore, all our wines are certified organic by the SGS (Société Générale de Surveillance) - the world’s leading inspection, verification, testing and certification company, which stipulates that no pesticides or herbicides may be used in order to protect the environment and to produce grapes as naturally as possible.
The owners have decided to preserve 20% of the pristine fynbos (indigenous flora) on the farm for posterity. Waverley Hills is also a proud member of the Biodiversity Wine Initiative (BWI). We are in agreement to protect the indigenous Flora and Fauna and to remove all alien vegetation on our estate. Natural predators are introduced into the vineyards to combat unfriendly insects and pests.
The vines are manicured and treated with the greatest care and the latest viticultural techniques are applied. Vineyard practices allow only for very small yields and the lusty South Easterly winds contribute to this practice by ensuring very loose bunches and extremely small berries. Summer leaf practices assure that enough sunlight enters the bunches to produce full-ripe grapes.
Grapes are monitored weekly for varaison (colouring of grape berries) with the latest techniques, to ensure that the grapes are harvested at optimal ripeness. Grapes are handpicked and sorted to produce superior wines from healthy SGS certified organically grown grapes.
The lifestyle of the wines is aimed at the health conscious wine lover. Grapes are cold macerated for a week before the juice is fermented with especially selected yeast. The wine is gently pressed to produce a medium-bodied wine that reflects the distinctive “garrigue” character of the terroir due to the spiciness of the fynbos in the area. Wines are matured in new French and American oak barrels to create the perfect balance between the fruity style of the red wine and oak flavours.
The well integrated wines with the soft tannins make these wines easy drinkable with a 5 - 7 years maturation potential. Waverley Hills produces 2 labels - “Waverley Hills” for the South African market and “Dixon’s Peak” for the export market.
