Vineyards
The Cabernet Sauvignon vines were from a gentle north facing block. The clone CS169, were planted on Richter 99 root stock and were in their fourth leaf. The yield from this block was 6 tons per hectare.
Harvest Date
Cabernet Sauvignon 7th March 2008 at 22 balling.
Winemaking
This wine was made from grapes which were specifically harvested with rose in mind and was not made from 'bled juice', a by product of red wine making. This allowed us to harvest at a balling which would translate to a respectable alcohol. The fruit was destemmed, crushed and received an average of 2 hours skin contact in the press before the pressing cycle commenced. This limited skin contact period was conducted in order to minimise the overtly herbaceous character associated with Cabernet Sauvignon which is harvested early.
Wine
This Rosé is refreshingly dry. The nose bursts with strawberry and tropical fruit aromas which follow through to a soft and juicy palate which finishes enticingly clean.
