Sour cherries, almonds and fruit cake spices fill the nose and palate.
Winemaking
Pablo is a blend of Cabernet Sauvignon ( 50%), Merlot (30%), Cabernet Franc ( 10 %) and Grenache ( 10%). The grapes were sourced from the Piekenierskloof and Stellenbosch areas of the Western Cape.
The grapes were hand picked at between 22ºB - 24ºB, sorted, crushed, cultivated yeast added and fermented on their skins for 5 days. Post fermentation and further skin contact continued in stainless steel tanks for a further 21 days before the juice was pressed and transferred to French Oak, (30% new wood and 70% 2nd fill) for 14 months until bottling took place.
